This Apricot Energy Bites recipe is the perfect no-bake treat. It’s vegan, gluten free, naturally sweetened and comes together in just 15 minutes!

I love having a selection of easy, no-bake recipes to choose from so that I can quickly make healthy snacks to keep me going.

This recipe for Apricot Energy Bites is a favourite that’s on high rotation in my house.

So many recipes for energy bites or bliss balls call for chocolate or nut butters and don’t get me wrong, I love them all!! But I also really love the fresh and fruity flavours of these energy bites.

And just how easy are these apricot energy bites?

All the ingredients needed measured out onto a plate.
A bowl with the blended ingredients and a small ice cream scoop being used to portion them out. Some are rolled into balls and being rolled in coconut.

  • Weigh out all the ingredients, or measure by cup – you don’t need to be super accurate like when baking.
  • Add all the ingredients to the bowl of a blender and blend until thoroughly combined and broken down. The mixture should stick together when pressed.
  • Then scoop out using a small ice cream scoop or tablespoon and roll into balls.
  • Coat in the extra coconut and refrigerate in an airtight container until ready to eat.
  • You can eat these straight away, but they will firm up further in the fridge.
  • For longer storage freeze in an airtight container.

Variations

  • Try using almonds instead of cashews.
  • Add 1/4 cup white chocolate chips.
  • Press into a lined baking tray, top with extra coconut and cut into squares.
  • Roll into a log, roll in extra coconut and slice into rounds.
  • Don’t have chia seeds, replace with ground linseeds instead.

  • Food Processor

Ingredients
  

  • 160 g dried apricots (1 cup)
  • 90 g medjool dates, pitted (1/2 cup or 6 dates)
  • 60 g cashews (1/2 cup)
  • 30 g desiccated coconut (1/4 cup) plus extra for rolling
  • 20 g ground chia seeds (2 tbsp)

Instructions
 

  • Using a food processor blend all ingredients until blended and they stick together when pressed.
  • Roll into tablespoon size balls, coat in extra coconut and refrigerate.
  • Store in the refrigerator in an airtight container for up to a week or for longer storage freeze in an airtight container.
